  First of all, this method of cooking is rather unconventional in Bulgaria. For the chef to bring this style of cooking to Sofia while flawlessly executing the presentation and flavor of the food as well as providing a wholesome experience is not only admirable but also inspiring. There is a great amount of effort and passion put into these dishes. I had the duck with cherry marmalade, which I thought was an elegant and delicious combination. The desserts I had (panna cotta and chocolate mousse) were phenomenal. Such wonderful food can really be enjoyed in the restaurant’s peaceful courtyard setting in the usually bustling center of Sofia. Overall, this restaurant creates a fusion of great cuisine and a down-to-earth experience, and is a rare find! I would love to go again when in Bulgaria!

  Pretentious and unworthy. You know those people that try too hard all the time? Well, restaurants are sometimes run by said people, which make for a really bad and disappointing experience. Such is the case with Vacuum, a place named after the Sous Vide cooking method that they employ in their kitchen. The food was tasteless and the dishes were average. As with most pretentious places, the plating looks great, but it just makes you wish they spent the same amount of effort on making sure the food tasted as good as it looks. One shining star in their menu, to be fair, is the Creme Brulee with Foie Gras.That thing was amazing!
